VERY cool item, although I'm glad I never had to rely on this to make waffles! As luck would have it, there is an IHOP down the street from me.
I also see, near the handles, a very faint 835 E, but haven't been able to find any information online.
If anyone here would be able to direct me to a site, providing dates and such, I would very much appreciate it.

You are correct, there is not a whole lot of ID help on the Internet regarding old cast iron. The #835 on your waffle iron is Griswolds part number, the large logo, inside the cross + wire handle dates it to 1908/1910. If you need further help, you can join the Griswold Forum. http://gcica.org/
