I just purchased this rack or shelf and as you can see it is still in my truck. It is now on my workbench in the process of being cleaned. I think it is an Antique Bakers cooling rack used in a Bakery and held pastries or donuts as I think the crud on it is from glazes or icing. Research has not turned up anything like this. Each shelf has dowels that are covered with a plastic sleeve that slide front to back. It will take forever to clean these. I don't know their purpose. I need advice as I would like to remove these sleeves so I do not have to clean them and wonder if it would ruin the antique value. I plan to display crocks, wooden bowls and wire baskets on it.
