I have a Taylor Cutlery stag handle Kansas City copperhead knife. I have had this is a box for 20 years or more. I am not sure of the age. I do have a letter from Stewart A. Taylor from Taylor Cutlery stating that is part of a limited edition of only 48pcs. This one is #5. I also have the Royals one listed in the letter number #13. Any more info on this you may have would be awesome. I have never seen any of these out there other than what I have.
I'd guess 1988 since that is the date on the accompanying letter; maybe it commemorates their last place finish that year in the AFC west (ouch!). Contact Taylor Brands (http://taylorbrandsllc.com/pages/contact-us) for specific information on why this series was made and how it was marketed.
I find this knife interesting since the term "copperhead" does apply to pocket knives - it's a specifically shaped bolster that Case introduced at least as early as 1915 - and your knife does not have copperhead bolsters so I don't see what the connection to "copperhead" is; but that is part of Taylor's marketing. High-specialty knives like yours are usually made to capitalize on something significant and are valuable only if there is still interest, i.e. how many Chiefs fans want a 25 year old pocketknife? Also, with low-volume production runs there are often not enough general collectors interested at this remove to run up the price. The Taylor brand itself is not highly sought-after by collectors.
